Warming Immune Support Root Vegetable Soup
Ingredients
½ Jap Pumpkin
½ butternut Pumpkin
2 Carrots
2 Sweet potatoes
4 Cloves garlic
1 Brown onion
Grinded dried turmeric and/or Fresh grated Turmeric (1 finger)
Optional freshly grated ginger (1 finger)
Black pepper/ Salt (Herbamare preferred)
Pinch Chili Flakes
Bone broth/ chicken stock (can use vegetable if vegetarian)
2 tbsp Coconut Oil
1 tbsp Butter
Coconut Milk
Parsley/ Hemp seeds to top
Method
Add tsp of butter to pan. Thinly chop brown onion and cook till brown, mince garlic and cook till fragrant. Add pepper!Add 2 tbsp of coconut oil to pan, throw in chopped vegetables and stir with oil, can add another tablespoon of butter here. Season with salt, pepper and turmeric. Leave for 5 mins on high.
Add bone broth to dish, make sure vegetables are covered and leave to simmer. Can add water if need be.
Add more turmeric and black pepper/salt for taste. Add chili flakes (optional)
Once vegetables are soft, 10mins. (If I’m in no rush I like to leave it simmering for a while longer 30mins). Add in 1 cup of coconut milk.
Blend soup together! Chop parsley to garnish (optional to add hemp seeds – extra protein) and enjoy with a buttered slice of sourdough.
